Another Carrot Raisin Salad

I know I made a big deal about making carrot raisin salad awhile ago.


I searched the web for that perfect one. However, the other day I was craving a salad, and decided to try again as the last one I made was just a tad too sweet for my liking. So, this time I looked into my fridge and pantry for ingredients and pulled out what I had ... a bag of carrot matchsticks, some plain old regular raisins, and mayonnaise.


Dumped the carrots into a bowl, added about a cup of raisins, and stirred a half cup of mayo in. It was fantastic! So simple, so fast, and not too sweet. Why was it such a big deal before? Plain old mayo, the magic ingredient.


Bruce did say that he wasn't used to the carrots being that particular size, I believe he was thinking about a grated carrot, but I also noticed that he finished up the salad over the next couple of days.


Isn't the easy way frequently the best?
